1本のブドウ樹から1本のワインしかできない最高峰のタウラージ

イタリアのカンパーニア州という場所はご存知ですか？

耳がモチモチのピッツァのナポリピッツァ発祥の地

あとは溶岩に飲まれてしまったポンペイ遺跡などがあります

このタウラージはアリアニコという

葡萄から造られるしっかり系のワインです

アリアニコとは「古代ギリシャの」という意味だそうで、ギリシャから持ち込まれた葡萄と思われていましたが、最近ではそうではない見方もあるみたいです

アリアニコのDNAから今のギリシャのブドウ品種を結びつけるものがないようです

しかし、こういうのはハッキリ言い切れないところもあるので、こういうことも言われてるよーぐらいでいきます

このワインはタウラージといって

南イタリアのバローロといわれています

バローロは北イタリアのスーパー高級なワインでとてもエレガント

対してタウラージはタンニンが熟しているので厳しさはマイルド

昔は10年寝かせないと飲めません！と言われるぐらい

歯ぐきがギシギシになるようなタイプでしたが、今ではそれほどではないみたいです😊

This is a top-tier Taurasi, made with an extremely low yield—almost as if one vine produces just one bottle of wine.

Are you familiar with Campania in Italy?

It is the birthplace of Napoli-style pizza, known for its soft and chewy crust, and also home to the ruins of Pompeii, which were buried by volcanic eruptions.

Taurasi is made from the Aglianico grape, a powerful and structured variety.

The name “Aglianico” is said to mean “from ancient Greece,” and it was long believed that this grape was brought from Greece.

However, recent studies suggest a different perspective.

DNA analysis has not clearly linked Aglianico to any modern Greek grape varieties.

That said, these theories are not always definitive, so it is best to understand this as one of several interpretations.

Taurasi is often referred to as the “Barolo of Southern Italy.”

Barolo, from Northern Italy, is a prestigious and highly elegant wine.

In contrast, Taurasi has well-ripened tannins, making its structure firm yet more approachable.

In the past, it was said that Taurasi needed at least 10 years of aging before it could be enjoyed—its tannins were so strong they could feel almost gripping on the gums.

Today, however, it tends to be more accessible.

We will serve this wine after allowing it to settle a little more.

A wine known as the “dawn sky” of New Zealand

Founded in Martinborough, this winery takes its name from the Māori language, meaning “dawn sky” or “new beginning.”
It all started on a rocky sheep-grazing land, where vines were planted from scratch.
Clive Paton believed in the potential of this land and began his journey with nothing.
Today, Ata Rangi has grown into one of New Zealand’s leading wineries.

ニュージーランドのワイン

世界には有名なワイン産地と

まだ知られていないワイン産地があります

知られていない産地だと

中国、モルドバ、ウクライナ、ロシア、メキシコ、ブラジル、イスラエル、インドなど

ソムリエはもちろん分かっていますが、お客様からすると「え！こんなとこでワイン造ってんの？」というのは珍しくありません。

これは、ワインをそこまで大量に造ってないことと

自国で消費して輸出あんまりしないのが大きいような気がします

例えばスイスなんかは自国でほぼ全部消費してしまうので

日本にくるスイスワインは極々一部です

ニュージーランドワインは逆で

スーパーやワインショップでもよく見かけます

またニュージーランドワインが美味しくない！とはあまり聞いたことがないです

これは最近になってワイン造りを始めたので

すっごい機械でピッポッパ！と温度管理したり

近代的な造り方を取り入れたというのも大きいはず

2000年以上前からワイン造ってます！というフランスやイタリアのワオン産地もいいですが

現代的なワイン産地も魅力的です

ニュージーランドの看板ワインは2種類

白はソーヴィニヨンブランで爽やかで

例えば夏に氷で冷やしたソーヴィニヨンブランを外でバーベキューと共に楽しむのもいいです

赤はピノノワールがとても有名です

こちらも花見の時にフルーティなピノノワールを少し冷やして、ローストビーフやサンドイッチなどと一緒に楽しむのも良さそうです

カベルネ・ソーヴィニヨン

世界を代表するブドウ品種の

カベルネソーヴィニヨンです

親品種は

白ブドウのソーヴィニヨンブランと黒ブドウのカベルネフランの子供なのはご存知ですか？

カベルネソーヴィニヨンはフランスのボルドーで栽培されますが、気候の影響で単一品種ではなく、何種類かブレンドして販売されます。

この気候とは

簡単にいうと雨です。

カベルネソーヴィニヨン収穫のタイミングで雨が降るとブドウは雨を吸いシャバシャバのワインになってしまうので、リスクマネージメントとして収穫タイミングの違うブドウ品種も栽培しブレンドしています。

大体ワインは色んなブドウをブレンドするより単一品種つまり1つのブドウから造られたワイン

例えばラベルにはっきりブドウ品種が書かれてる方がわかりやすいので消費者もそちらの方を選ぶ傾向にあります。

もちろんソムリエもオススメするのは単一品種のワインの方が説明が簡単なのでそればっかり売ってしまいますが、それではいけません。

そこでブレンドタイプのワインを販売する時の魔法の言葉が「こちらのワインは複数の品種をブレンドしています、この地域は様々なブドウを使用し1つの芸術を造るのです」
